Pork fillet stew with mange tout and parsley
50 g organic coconut oil or butter
4 large mushrooms, sliced
600 g pork fillet, cut into 1 cm slices
1 red onion, chopped
1⁄3 head cauliflower, broken into florets
3–4 cloves garlic, crushed
200 ml fresh cream
200 ml crème fraîche
Pinch of nutmeg
Salt and pepper
Pinch of cayenne pepper
180 ml chopped fresh parsley
15 mange tout
10–15 olives
Melt the oil or butter in a pan and fry the mushrooms until crisp. Transfer the mushrooms to a separate saucepan. Brown the pork fillet in the frying pan (you may need to use more oil or butter). Add the meat to the mushrooms.
Add the onion, cauliflower and garlic and pour in the cream. Add the crème fraîche to the stew. Bring to the boil and add the spices, parsley, mange tout and olives. Simmer for 5–10 minutes.
Serve with a salad.
